Here we are again, halfway through the week! Congrats on making it this far. 🙂 The weather finally changed over the weekend and we now feel like fall in the south east. The days still may reach 80+ degrees, but the evenings are amazing! When the weather chills out, my kitchen warms up. All week scents of cinnamon and pumpkin spice have been wafting through my home. Since I’m on a roll with fall recipes, I thought I would share a perfect treat to accompany your ‘cup of joe’ in the mornings. Check out this Apple Coffee Cake! I can’t take all the credit for this one. I was walking through the bakery aisle at Earth Fare and I saw a “gluten” version of this cake and thought, I bet I could make this. Once my groceries were unpacked, I hit up Google and found this wonderful recipe. It is super easy and is grain free, dairy free and gluten free. Unfortunately, it includes coconut sugar, which according to my internet research, is not Paleo. Sorry Paleo friends!
