It’s that time of year. The ads anticipating the Super Bowl LII have started. My football team, the Patriots, are still playing and I’ve got my fingers crossed. With the recent snow storm, I was looking for comfort food recipes. Nick has been asking for sloppy joe’s for a while now and it seemed like the perfect time to cook some.
This recipe was super simplistic. The most time consuming part was chopping the vegetables and mixing the sloppy joe sauce. As with most recipes, this takes about an hour to fully make.
My favorite part about this recipe was the crispy, salted sweet potato skin. The spicy level of this recipe is pretty low. My stomach doesn’t handle spicy foods well, so this detail was perfect for me. However, you can adjust the spices to your preferences.
This recipe is paleo friendly, dairy free, gluten free and whole 30. It is high in protein and fiber. A nutritious, filling meal for lunch or dinner. Recipe feeds 4 to 6 people and can be topped with plain almond yogurt as a sour cream alternative!
