Welcome to Tuesday, friends. I didn’t forget about you yesterday. However, I had a guest coming for dinner, which required much of my time in the kitchen. Oh yes, and cleaning up the house from the weekend. Anyone else find that it only takes two days to completely make the house look like a disaster zone?!
My menu for the evening was Paleo Chicken Parmesan on a plate of brown rice pasta topped with organic marinara sauce. One of these days I am going to actually photograph this meal so I can share it with you. It’s one of our favorites! I also made an Italian Salad. I tossed this with homemade dressing from fresh, organic basil, parsley, olive oil, red wine vinegar and seasoned with salt and pepper. This dressing was a new recipe for me and everyone enjoyed it. I’ll be sharing the recipe with you in a future post.
Dessert, my favorite part of the meal, was Dairy Free Chocolate Pudding and these cute Petite Paleo Chocolate Chip Cookies. I always like to have two options just in case my dinner guests have a preference or a sweet tooth.
