This past week in North Carolina, we have had HOT temperatures. The heat index on Sunday was 114 degrees! Friday night, I was craving something fruity and refreshing so I made an extra large pitcher of gluten free sangria. It was full of organic oranges, peaches and strawberries. We were blessed with company on Saturday night and I was glad to have a fun beverage on hand to share.
This morning I noticed my leftover peaches were ripe and would not last another day. I jumped on Pinterest and baked the first muffin recipe I found. I am a big fan of muffins as they can be frozen for future snacking, breakfast or travel. This Sweet Peach Paleo Muffin Recipe is fruity, light and filling. The combination of cinnamon, peach, almond and coconut make your taste buds think you are eating southern peach cobbler!
