Cauliflower Bacon Bowl

Don't be fooled! This isn't your favorite mac and cheese repackaged as a palio meal. This dairy free, gluten free dinner is packed with flavor. Nutritional yeast, bacon and chives are three of the seven ingredients making up this amazing meal.

1Begin by cutting the cauliflower florets away from the stem. Place florets in large pot with two cups water and steam until soft.
2While cauliflower is steaming, chop your bacon into small pieces. Find a large pot and cook bacon over medium-high heat until crispy. Remove bacon and set aside. Discard the remaining fat except enough to coat the bottom of your pot.
3Once your cauliflower is tender, drain and place in bacon pot. Add nutritional yeast, sea salt, black pepper, coconut milk and half the bacon. Mix well.
4Serve with chopped chives and remaining bacon as toppings.
