A fluffy, petite bread flavored by cinnamon, butter and cream cheese. This gluten free bread is great for breakfast or a snack. It'd be awesome as French Toast!
Gluten Free and Grain Free
2 tbsp Clarified Butter/Ghee, melted
2 tbsp Clarified Butter/Ghee, softened
1 cup Super-Fine Almond Flour, blanched whole almonds
1/4 cup Organic Confectioners Sugar
1Begin by warming the oven to 350°F. Place parchment paper in a bread loaf pan and set aside.
2Separate eggs into 2 mixing bowls. Add the egg whites to a mixer with whisk attachment. Before mixing, add lemon juice. Whisk until fluffy with soft peaks. Set aside.
3Using a second mixer bowl, add egg yolks, softened butter, vanilla, cream cheese and maple syrup. When well mixed, add 1/2 tsp cinnamon, baking powder and almond flour. The mixture will be thick and smooth when ready for the next step.
4In a third bowl, whisk melted butter, 1 tsp cinnamon and powdered sugar. Set aside.
5Fold your egg whites into the bread mixture. Your end result will be a a slightly runny batter.
6Pour half of your bread batter into the prepared pan. Follow this by evenly spreading the cinnamon sugar mixture on top. Pour remaining batter.
7Taking a butter knife, swirl through the batter in bread pan to incorporate the cinnamon sugar mixture into the bread.
8Bake for 30 to 40 minutes or until the top of your bread is golden brown. Remove from oven and allow to cool.
9Enjoy with a little butter spread on top!
