Recipe: Apple Coffee Cake

Here we are again, halfway through the week! Congrats on making it this far. 🙂 The weather finally changed over the weekend and we now feel like fall in the south east. The days still may reach 80+ degrees, but the evenings are amazing! When the weather chills out, my kitchen warms up. All week scents of cinnamon and pumpkin spice have been wafting through my home. What about you? Since I’m on a roll with fall recipes, I thought I would share a perfect treat to accompany your ‘cup of joe’ in the mornings. Check out this Apple Coffee Cake! Recipe: Gluten Free Lemon Cookies

It’s the first week of June and things are starting to heat up down here in North Carolina. When it gets hot, I crave refreshing foods. They are great straight out of the oven as well. You can’t go wrong with these cute cookies!

We were not off to a great start after our holiday weekend. I was determined to do better. The neighborhood pool has opened up for the summer season. We enjoy spending Saturday and Sunday morning soaking up a little Vitamin D. This means I need to plan healthy pool snacks and have lunch ready for when we…
