We are officially two weeks into the 2018 fall season. Everyone in our neighborhood is decorating their homes with pumpkins, mums, lanterns and string lights. While it still doesn’t feel like fall here in the Lake Norman area of North Carolina, that won’t stop me from baking all things spiced! I am currently craving anything with cinnamon or ginger and that includes these Gluten Free Gingersnap cookies I’m sharing with you today. It may not feel like it here in Huntersville, North Carolina, but we are starting to see signs of the approach of the fall season. The leaves are changing color and there are enough on the ground to hear them crunch under your feet. However, the weatherman is calling for 90 degree temps this weekend!
