Here we are again, halfway through the week! Congrats on making it this far. 🙂 The weather finally changed over the weekend and we now feel like fall in the south east. The days still may reach 80+ degrees, but the evenings are amazing! When the weather chills out, my kitchen warms up. All week scents of cinnamon and pumpkin spice have been wafting through my home. Recipe: Gluten Free Gingersnaps

While it still doesn’t feel like fall here in the Lake Norman area of North Carolina, that won’t stop me from baking all things spiced! I am currently craving anything with cinnamon or ginger and that includes these Gluten Free Gingersnap cookies I’m sharing with you today. This paleo friendly recipe yields one dozen gooey, fudge-like cookies. Enjoy them with a cold glass of almond milk or topped with vanilla cashew ice cream. Recipe: Baked Walnut Pears

It may not feel like it here in Huntersville, North Carolina, but we are starting to see signs of the approach of the fall season. The leaves are changing color and there are enough on the ground to hear them crunch under your feet. However, the weatherman is calling for 90 degree temps this weekend! I don’t think I will ever get used to the changing colors of the trees coupled with high southern temperatures. Our road trip to the Blue Ridge Mountains had me craving these juicy, decadent pears.
