Chocolate Almond Energy Balls

  ,

May 11, 2017

Energy balls are the perfect on the go, hunger-satisfying snack. If you are on a weight training program, like I am, it is essential that you feed your body the proper nutrients it needs throughout the day. The husband and I love these Chocolate Almond Energy Balls as they satisfy our sweet tooth while feeding our body the protein it needs.

Traveling with food allergies or on a limited diet can be a real struggle. However, these chocolate goodies can be frozen and stored in your luggage for future snacking needs! They are gluten free, dairy free, egg free and vegan.

  • Prep: 10 mins
  • Yields: 24 Balls

Ingredients

1 cup Pitted Medjool Dates

1 cup Unsalted Almonds

3 tbsp Organic Cacao Powder

1/4 cup Organic Unsweetened Shredded Coconut

1/2 tsp Pure Vanilla Extract

Directions

1Begin by adding all of your ingredients into a food processor.

2Blend for 2 minutes until almonds are finely chopped. Mixture will begin to look like dough.

3At this time, add up to one tablespoon of filtered water - start with a single teaspoon at a time. Pulse until dough is ready to roll.

4Roll into balls of your desired size. I prefer to use a tablespoon amount so each ball is a consistant size.

5If you wish, sprinkle energy balls with shredded coconut.

6Place balls in air-proof container and refrigerate.

If you are looking for a great food processor, I use the Hamilton Beach 10-Cup Food Processor. We received it as a wedding gift 5 years ago and I am so glad my co-worker was so thoughtful. I have included links to where I purchase my organic ingredients to help with your grocery shopping.
