

Double Chocolate Avocado Muffins

Do you have a sweet tooth in the morning or just need an afternoon pick me up? Try these double chocolate avocado muffins. They are a guilt-free snack that will increase your energy levels.
Gluten free, dairy free and grain free.

Ingredients
1/2 cup Coconut Flour
1/3 cup Organic Cacao Powder
1/2 cup Organic Coconut Sugar
2 tsp Organic Pure Vanilla Extract
1/3 cup Dairy Free Chocolate Chips
Directions
1Preheat your oven to 375 degrees. Fill your muffin pan with unbleached liners.
2Mix coconut flour, cacao powder, baking powder and sea salt in a separate bowl.
3In a large bowl, mash avocado. Add coconut sugar, eggs and vanilla extract. Mix well.
4Slowly add dry ingredient mixture. Dough will begin to become dry. Add almond milk a little at a time until batter is completely mixed.
5Fold in dairy free chocolate chips.
6Using a 1/4 measuring cup, spoon dough into lined muffin pan.
7Bake for 18-22 minutes. Check the middle with a toothpick to make sure they are done.
