French Toast Casserole (GF)

Served with organic maple syrup and fresh berries, this Gluten Free French Toast Casserole will warm your belly any morning of the week! Prefer to meal-plan? Bake this in advance. It reheats easily and tastes JUST as good.

Ingredients

15 oz. Gluten Free White Bread (cut into cubes)

6 Pasture-Raised Eggs

2 cups Unsweetened Almond Milk

2 tsp Organic Vanilla Extract

2 tsp Organic Ground Cinnamon

1/3 cup Organic Coconut Sugar

1/4 cup Unsalted Grass-Fed, Pasture-Raised Butter (melted)

1/4 tsp Organic Sea Salt

Gluten Free French Toast Toppings

1/2 cup Frozen Organic Blueberries (your choice)

1/2 cup Chopped Organic Strawberries (your choice)

2 tbsp Organic Powdered Sugar

Directions

1Preheat oven to 350°F. Grease 9x13 glass baking dish with Organic Vegetable Shortening. Place chopped bread evenly into dish. Bake for 5-7 minutes. Don't overcook! The GF bread is ready when it's lightly golden.

Chopped Gluten Free Bread French Toast Casserole

2In a large mixer, add pasture-raised eggs, almond milk, organic vanilla extract, ground cinnamon, organic coconut sugar, melted butter, and sea salt. Attach whisk and blend until all ingredients are smooth. I found having my eggs and milk at room temperature helps.

3Pour egg mixture over baked gf bread. At this point, if you would like to top your French Toast Casserole with fruit, do it now. (I cooked this gf casserole in advance. Therefore, I waited to add fresh berries until morning.)

4Bake French Toast Casserole GF for 60 minutes.

5Remove from the oven and add your desired amount of organic powdered sugar and cinnamon.
