Fudge Paleo Brownies

A healthy take on a classic dessert. This fudgy, paleo friendly brownie will have you reaching for a glass of almond milk and seconds! The secret ingredient in this recipe: Espresso Powder.

Gluten free, dairy free, grain free, paleo friendly.

  • Cook: 30 mins
  • Yields: 9 Large Bars

Ingredients

1/2 cup Melted Coconut Oil

1/2 cup Unsweetened Cocoa Powder

2 oz. Guittard, 100% Unsweetened Chocolate Baking Bar, chopped into pieces

3/4 cup Local Honey

2 Pasture Raised Eggs, room temperature

1 tsp Vanilla

1/4 cup Coconut Flour

1/2 tsp Sea Salt

1 tsp Fair Trade Espresso Powder

Directions

1Preheat your oven to 350 degrees. Line an 8x8 glass baking pan with parchment paper. Set aside.

2Begin by cooking coconut oil, unsweetened cocoa powder and unsweetened chocolate in a sauce pan over medium heat. Continue whisking until creamy. Remove from heat.

3Stir in honey. Your chocolate mixture should begin to thicken slightly.

4Stir in eggs and vanilla and mix well.

5Lastly, add in coconut flour, sea salt and espresso. Stir until any pockets of dry flour are thoroughly mixed into batter.

6Pour into prepared 8x8 pan and bake for 30 to 32 minutes. If the top of the brownies looks wet, they aren't finished baking.

7Let cool and cut into squares. Refrigerate to keep fresh.

    OH MY GOODNESS…these are amazing! Just a few things I had to substitute. I used 1/2 cup of honey and 1/4 cup of syrup(may have even been less honey). I used 1/4 cup of GF Bob’s Red Mill oat flour and I used the Enjoy Life Dark chocolate bars. Thank you for your recipe!

      I’m so glad these worked out for you! Way to be creative and use the items you have in your pantry. These brownies are a favorite of mine and I often take them with me to social events. No one knows they are gluten and dairy free!
