Gluten Free Banana Nut Muffins

Muffins are a great alternative for snacks or meals on the go. The almond butter, in this banana nut bread recipe, tones down the banana flavor. The texture is smooth with a bit of crunch from the walnuts.
Gluten Free, Dairy Free, Grain Free and Paleo Friendly

- Yields: 12 Muffins
3-4 Organic Bananas, ripe and mashed
3 Pasture Raised Eggs, room temperature
3 tbsp Organic Cold Pressed Coconut Oil, melted and cooled
1/3 cup Coconut Flour
1Heat your oven to 350 degrees. Prepare a muffin tin with parchment paper liners.
2Mix wet ingredients until well combined.
3In a separate bowl, whisk dry ingredients. Slowly mix dry ingredients into wet until combined. Fold in chopped walnuts.
4Pour batter into prepared muffin tin.
5Bake for 16-19 minutes or until a toothpick comes out clean from the center of each muffin.
6Cool and enjoy!
