A healthy take on the oatmeal cookie. While this treat may not be paleo friendly due to the oats, it is still flour free, dairy free and free of refined sugars! Enjoy these with a cold glass of almond milk.
Add almond flour, cinnamon, baking soda and sea salt to wet ingredients. Mix until blended.
Using a spatula or wooden spoon, mix in gluten free oats and raisins.
Cover mixing bowl and chill in refrigerator for 30 minutes.
Heat oven to 350 degrees.
Using a measurement of 1.5 Tablespoons, roll individual balls of cookie dough. Place on cookie sheet prepared with parchment paper. Each ball of dough should be placed a couple inches apart. Gently press down on each cookie to flatten. Bake for 8 to 10 minutes.
Upon removal from oven, immediately flatten cookies a second time. Allow to cool on rack.
