A fresh take on breakfast bread! The flavors of banana, blueberry, coconut and almonds are the perfect combination for an on-the-go snack or warmed in the oven for breakfast.
2 Fresh Organic Bananas, mashed
2 Cage-free Eggs, room temperature
3 tbsp Organic Cold Pressed Coconut Oil, melted and cooled
3 tbsp Organic Maple Syrup
1 tsp Vanilla Extract
2 cups Super-Fine Almond Flour, blanched whole almonds
1 tsp Baking Powder
1 cup Fresh Organic Blueberries
1Preheat your oven to 350 degrees. Line bread pan with parchment paper. I recommend using FSC Certified Parchment Baking Paper by If You Care.
2Mash bananas in mixer before adding wet ingredients. Mix well.
3Add almond flour and baking powder to batter. Mix well.
4Fold in blueberries.
5Pour batter into bread pan and evenly distribute.
6Bake for 40 to 45 minutes. Watch the bread near the end and remove from oven once edges have turned golden.
