A simple Mexican dish the whole family will enjoy. Combine fajita seasoned ground turkey with fresh peppers prepared over a bed of cauliflower rice. A great meal prep idea!
Gluten Free, Dairy Free, Egg Free, Keto and Paleo Friendly
1Heat iron skillet on medium to high. Cook garlic, yellow onion and ground turkey until meat is almost cooked.
2Mix in fajita seasoning and coat mixture well.
3Stir in red and green peppers and cook until vegetables are tender. Remove skillet from heat and set aside.
4In a second skillet, heat to medium/high heat. Add olive oil to warm skillet. Cook cauliflower rice until tender. Add salt to taste.
5When food has cooled, evenly divide to four meal prep containers. When ready to eat, squeeze fresh lime and sprinkle fresh cilantro on top.
