Rise and shine with this flavorful breakfast bread! A paleo-friendly recipe made with freshly squeezed orange juice, zest from the orange peel and organic cranberries. Another great holiday recipe to share with friends and family!
Gluten Free, Grain Free, Dairy Free, Paleo Friendly
2/3 cup Coconut Flour
1/2 tsp Gluten Free Baking Powder
1/2 tsp Gluten Free Baking Soda
pinch Organic Sea Salt
1/4 tsp Cardamom
1/4 tsp Cinnamon
1/3 cup Raw, Local Honey
6 Pasture Raised Eggs, at room temperature
1/3 cup Organic Cold Pressed Coconut Oil, melted and cooled
1/2 tbsp Vanilla Extract
1/2 cup Freshly Squeezed Organic Orange Juice
Grated Zest of One Orange
1 cup Organic Cranberries
1Preheat your oven to 350 degrees. Line a bread loaf pan with parchment paper.
2In a large bowl, whisk all dry ingredients. Set aside.
3In a second bowl, mix honey, eggs, melted coconut oil, vanilla extract and orange juice.
4Slowly add wet ingredients to dry. Once the batter is well mixed, fold in zest and cranberries.
5Pour into prepared loaf pan and bake for 45 to 50 minutes. Always check the center with a toothpick to make sure the bread has fully cooked!
