A hearty, filling grain free bread perfect for breakfast, snacking and more. The cinnamon flavor is light enough to make this bread an option for sandwiches!
Gluten Free, Grain Free, Dairy Free and Paleo Friendly
2 cups Super-Fine Almond Flour, blanched whole almonds
2 tbsp Coconut Flour
1/2 tsp Organic Sea Salt
1 tsp Baking Soda
1/4 cup Organic Flaxseed Meal
5 Whole Eggs plus 1 Egg White, whisked
1 1/2 tsp Apple Cider Vinegar
2 tbsp Local Raw Honey
3 tbsp Clarified Butter/Ghee, divided
1 tbsp Organic Cinnamon
1Preheat oven to 350 degrees.
2Grease 9 x 5 pan with coconut oil and set aside.
3In a large bowl, mix the following dry ingredients: almond flour, coconut flour, sea salt, baking soda, flaxseed meal and 1/2 Tablespoon cinnamon.
4In a second bowl, begin by whisking your eggs and egg white. Once completed, add the apple cider vinegar, honey and 1.3 Tablespoons melted ghee.
5Slowly mix dry ingredients into wet ingredients.
6Pour your batter into your greased bread pan.
7Bake for 30 to 35 minutes.
8When your cinnamon bread is fully baked, melt the remaining clarified butter and mix with remaining cinnamon. Brush the mixture on the top of your bread. Cool and enjoy!
