

Salted Almond Butter Cups

Are you trying to curb those late night cravings for something sweet? Here's a healthy alternative to a favorite classic candy treat: peanut butter cups! These contain only four ingredients and can be whipped together in a matter of minutes. (minus the freezer time)

- Yields: 12 Mini Peanut Butter Cups
Ingredients
16 oz. Organic Dark Chocolate Chips (55% cacao), melted
2 tbsp Super-Fine Almond Flour, blanched whole almonds
Directions
1Place mini-muffin liners in a mini muffin pan.
2Melt chocolate chips over low heat. Stir until all lumps are gone.
3Pour a small amount of melted chocolate into each liner to form the bottom of the peanut butter cup.
4In a separate bowl, mix almond butter, almond flour and maple syrup. Roll mixture into small balls/patties. Make sure they are small enough that they fit perfectly inside the muffin liner without touching the sides.
5Place a peanut butter ball into each muffin liner.
6Pour remaining chocolate over the peanut butter balls until the muffin liners are full to the top.
7Place in refrigerator or freezer until fully hardened. This may take a couple hours. Remove, sprinkle with salt and enjoy. We love ours with a cold glass of iced coffee!
