Protein Power Bars

Three step recipe with no oven required! Get out your food processor and make these healthy protein bars today. They are the perfect in-between meal snack. These bars are a nutty mixture of almonds and walnuts combined with the sweet, refreshing flavor of coconut. As these energy-packed bars are stored in the refrigerator, they make a cool summer snack.
Gluten-free, Dairy-free, Egg-Free, and Paleo friendly.

  • Prep: 10 mins
  • Yields: 16 One Inch Square Bars

Ingredients

1 cup Raw Unsalted Almonds

1 cup Walnuts

1/2 cup Ground Flaxseed

1/2 cup Organic Unsweetened Shredded Coconut

1/2 cup Almond Butter

1/2 tsp Sea Salt

1/2 Organic Cold Pressed Coconut Oil, melted

1 tbsp Raw Honey

1 tbsp Pure Vanilla

1/2 cup Chopped Dried Black Figs

Directions

1Begin by adding your nuts, flaxseed, shredded coconut, almond butter and salt into a food processor. Pulse until mixture is coarsely ground.

2Add all remaining ingredients and pulse until mixed well.

3Using an 8" x 8" glass baking dish, press pasty mixture evenly and chill in refrigerator for up to one hour. Cut into any size bar of your choosing and store in refrigerator or freezer.
