An easy to make and perfectly balanced meal consisting of:
2 lb Organic Boneless Chicken Breasts
1 tbsp Olive Oil
pinch Sea Salt and Pepper
3 Minced Garlic Cloves
1 Medium Organic Sweet Potato, Peeled and Diced
1 cup Filtered Water
1/2 lb Organic Asparagus (Cut into 1 or 2 inch pieces diagonally)
1Cut the chicken into small pieces on plastic cutting board. Sprinkle with salt and pepper. Set aside.
2Dice sweet potato, cut asparagus and set aside.
3Heat olive oil in skillet over medium heat. Add garlic and chicken. Saute chicken for 7 to 10 minutes stirring often. Set chicken aside and cover to keep warm.
4Add water to skillet and add sweet potatoes. Cook for about 10 minutes or until soft.
5Add asparagus and cook for an additional 4 to 5 minutes.
6Mix with cooked chicken and serve immediately.
