Preheat oven to 350°F. Grease 9x13 glass baking dish with Organic Vegetable Shortening. Place chopped bread evenly into dish. Bake for 5-7 minutes. Don't overcook! The GF bread is ready when it's lightly golden.

In a large mixer, add pasture-raised eggs, almond milk, organic vanilla extract, ground cinnamon, organic coconut sugar, melted butter, and sea salt. Attach whisk and blend until all ingredients are smooth. I found having my eggs and milk at room temperature helps.

Pour egg mixture over baked gf bread. At this point, if you would like to top your French Toast Casserole with fruit, do it now. (I cooked this gf casserole in advance. Therefore, I waited to add fresh berries until morning.)

Remove from the oven and add your desired amount of organic powdered sugar and cinnamon.
