Crumb Topping
 0.75 cup Super-Fine Almond Flour, blanched whole almonds
 0.33 cup Pure Maple Sugar
 1.50 tsp Organic Ground Cinnamon
 0.25 cup Organic Cold Pressed Coconut Oil, cold and cut into pieces
Cake
 3 Pasture-Raised Eggs, room temperature
 0.25 cup Organic Full Fat Coconut Milk
 1 tbsp Fresh Pressed Lemon Juice
 3 tbsp Organic Cold Pressed Coconut Oil, melted and cooled to room temperature
 0.33 cup Pure Maple Sugar
 1 tsp Organic Pure Vanilla Extract
 2 Super-Fine Almond Flour, blanched whole almonds
 0.25 cup Arrowroot Flour
 0.50 tsp Baking Soda
 0.25 tsp Sea Salt
 2 tsp Organic Ground Cinnamon
Optional Icing
 0.33 cup Organic Powdered Sugar
 0.50 tsp Organic Ground Cinnamon
 4 tsp Organic Full Fat Coconut Milk

Preheat your oven to 350 degrees and line an 8 x 8 glass pan with parchment paper.

Mix your crumb toppings in a bowl and set aside in refrigerator.

In a separate bowl, mix your flours, baking soda, sea salt and cinnamon.

In bowl number 3, mix your eggs, coconut milk, lemon juice, coconut oil, sugars and vanilla extract.

Slowly begin to mix your dry ingredients into your wet until well blended.

Pour batter into prepared pan making sure it is as even as possible. Then sprinkle your crumby topping on top. I had quite a thick layer of crumbs!

Bake for 38 to 40 minutes. A good rule of thumb is to check the center with a toothpick. If it comes out clean, the cake is ready. I could tell mine needed extra time because the topping slid around as I moved the pan from side to side.

Icing

Give your cinnamon coffee cake plenty of time to cool. Cut into thirds.

Prepare your icing by whisking your powdered sugar, cinnamon and coconut milk. Pour gently over your coffee cake so the icing drizzles over the sides.

Store in the refrigerator and warm when ready to serve.

A&A Maple Sugar Review:

This was the first time I have ever baked with maple sugar. I prefer to use paleo friendly ingredients. Staying away from refined sugars is a big part of the diet. Thankfully, maple sugar is a paleo approved sweetener.

When I think of maple sugar, I think of maple sugar candies. You know, the ones usually shaped into leaves or other fall designs? They are sickeningly sweet! However, the A&A Pure Maple Sugar gave my cinnamon coffee cake a light, maple flavor that reminds me of home. It's hand made in Maine, after all. I'll never make my coffee cake without maple sugar again.
