Thank goodness for short weeks! What did you all do with your Labor Day? We spent the early morning at the gym, a few hours at the pool (the last day. *insert sad face.) and then ran errands. It wasn’t a trip to some amazing destination, but it was well balanced.

There is something about obtaining balance in your life, even if just for a short moment in time. It’s full of peace and contentment. Everything feels right with the world. That was our Labor Day Monday.

While we were out and about, I found a beautiful wool throw rug for my living room. I have wanted one for the three years we have been living in our Southern Home. We popped into Home Goods and it was there. The colors and texture match perfectly.

As the rest of the week is my normal gym and cooking routine, I won’t bore you with those details. However, I will give you my gluten free meal prep schedule and recipes for the week. Once you take a look at the week, you’ll notice a theme. For some reason my brain was on a Mexican food kick!

What We’re brewing

Every week, it’s my goal to try a new coffee. This week we are brewing Cameron’s Coffee Organic Rainforest Blend. Just in case you needed to know, we drip brew our coffee in our glass Chemex. We find this coffee brewing method to give us the best flavor and coffee temperature.

Cameron’s Rainforest Blend is a mild, light to medium roast. We love Blue Mountain Coffee, but it’s quite expensive. This is a nice alternative that doesn’t hurt our wallets or pallets. ha ha! 🙂
