

Petite Paleo Chocolate Chip Cookies

You won't be able to resist these cute cookies! They may be small in size, but pack so much flavor. A paleo-friendly, dairy free, gluten free dessert. Amazing ingredients such as: coconut flour, almond flour, coconut oil, almond butter and dairy free chocolate chips.

Ingredients
1 cup Super-Fine Almond Flour, blanched whole almonds
1/4 cup Coconut Flour
6 tbsp Palm Shortening or substitute Coconut Oil at room temperature
6 tbsp Organic Creamy Almond Butter, room temperature
1/2 cup Enjoy Life Chocolate Chips
Directions
1This recipe is quite simple with the use of your electric mixer. Beat together your palm shortening (or coconut oil) and coconut sugar until you have a whipped mixture. I recommend mixing at a medium speed for about one minute.
2Continue mixing at the same speed with the addition of your almond butter and vanilla extract. Once combined, add your egg and beat on low.
3In a separate bowl, mix your dry ingredients. Slowly add the mixture to your wet ingredients and beat until well blended.
4Add your dairy free chocolate chips to your cookie dough and mix by hand.
5Place your cookie dough in the refrigerator to chill for about an hour.
6Preheat your oven to 350 F. Line two baking sheets with parchment paper. I recommend using FSC Certified Parchment Baking Paper by If You Care.
7Roll your dough into balls using a tablespoon. This ensures cute, petite matching cookies. Make sure to lightly press them down with the palm of your hand before placing in your oven.
8Bake for 8 minutes or until the edges of the cookies are slightly brown.
9Before storing away, make sure cookies cool completely on your baking sheet.
