Gluten Free Flourless Oatmeal Raisin Cookies

A healthy take on the oatmeal cookie. While this treat may not be paleo friendly due to the oats, it is still flour free,  dairy free and free of refined sugars! Enjoy these with a cold glass of almond milk.

Gluten Free, Dairy Free and Vegan.

Ingredients

1 cup Super-Fine Almond Flour, blanched whole almonds

1 1/2 tsp Organic Cinnamon

1/2 tsp Baking Soda

pinch Sea Salt

2 tbsp Organic Cold Pressed Coconut Oil, melted and cooled

3 tbsp Almond Butter

1/4 cup Plus 1 Tablespoon - Organic Maple Syrup

1/2 tsp Organic Vanilla Extract

1 cup Certified Gluten Free Rolled Oats

1/3 cup Organic Raisins

Directions

1Mix all wet ingredients in mixer.

2Add almond flour, cinnamon, baking soda and sea salt to wet ingredients. Mix until blended.

3Using a spatula or wooden spoon, mix in gluten free oats and raisins.

4Cover mixing bowl and chill in refrigerator for 30 minutes.

5Heat oven to 350 degrees.

6Using a measurement of 1.5 Tablespoons, roll individual balls of cookie dough. Place on cookie sheet prepared with parchment paper. Each ball of dough should be placed a couple inches apart. Gently press down on each cookie to flatten. Bake for 8 to 10 minutes.

7Upon removal from oven, immediately flatten cookies a second time. Allow to cool on rack.
